Quick quinoa salad

My husband and I have once again decided to ring in the New Year with a cleanse. Not a crazy all-liquid detox that, quite frankly, we’d never stick to, but a version of this sensible one that Camille wrote about for Women’s Health.

Our major stumbling block last year was lunch. I felt like I was preparing two dinners a day, which was too much work and made packing lunches a hassle. So this go-around, I’m determined to create easy lunches using cleanse-worthy ingredients.

Yesterday’s solution was a tuna and quinoa salad, which as a bonus helped us carry on the Meatless Monday tradition. (Sara wrote a great post about quinoa in February 2010, and I definitely share her enthusiasm for this superfood.) This recipe is easy to pull together and filling. Just add:

1 can tuna fish, drained
1 cup quinoa, cooked
1/2 cup artichoke hearts , chopped
Two teaspoons of extra virgin olive oil (half garlic flavor, if you have it, and add more if it seems dry)
Kosher salt and freshly ground pepper to taste
Squeeze of fresh lemon

That’s it!

This easily makes two portions, which I served over baby romaine for a little added green.

(Note: To make this recipe super simple, I used frozen artichokes, which I ran under cold water then steamed quickly in the microwave.)

YAY a new post, so excited. Love the ingredients, thanks Darci. I am making quinoa with spinach/mushrooms a Jean-Georges recipe with dinner tonight. Hope there are leftovers for lunch tomorrow. A problem cooking for 3 males is that even doubled recipes get polished off #sad.

How is this meatless? Tuna is meat.

Kerry, you’re correct. Many people do include fish in what are called “meatless” meals (think Friday fish fries for observant Catholics), which I think is what Darci was referring to here. Although Svelte is very supportive of flexitarian diets, we are not a vegetarian website and are admittedly light on strictly vegetarian fare.

Camille, you’re right about my train of “meatless” thought. However, my husband and I decided just yesterday, before I noticed Kerry’s comment, to make meatless Mondays truly meatless, and have fish on Fridays. (I guess we’re into alliterations over here.) I’ll be sure to post about any great veggie meals I happen upon!
