I do sweet potatoes a whole lot these days, but also eggplant slices (tons of antioxidants and I love the savoriness) and cauliflower, cooked on high in the oven until they get really toasted on the outside. My Whole Foods has a steamed collard greens salad with apples, onions, garlic and red pepper flakes (therein lies the flavor trick) that&#039;s as easy to replicate as it sounds.</description>
