Between my Polish/Southern family and my husband’s Puerto Rican family, we inevitably end up having an overindulgent holiday–think lots of rich, sugary, high-fat, and fried food. Luckily, we follow that dietary disaster with a decidedly healthier tradition …
The first week in January each year, we head to Colorado for a family vacation. Vacation is normally synonymous with lots of food and little activity, but it’s truly hard not to be healthy here. We spend the afternoons on the mountain, log lots of gym time (thanks to in-laws who are happy to babysit), read, relax and even squeeze in a trip to the spa. Breakfasts and lunches are made at home, then we head out for dinner where it’s surprisingly easy to find delicious but lean options like buffalo burgers and salads topped with wild salmon.
