Fast food done right

I don’t do frozen dinners. For starters, I don’t have a microwave, and then there’s the fact that most pre-made meals taste like cardboard smothered in cheese.

But yesterday, I couldn’t stand the thought of cooking anything complicated, but didn’t want to order takeout, as I’m trying to watch what I eat (and God quite literally only knows how many calories are in the green curry that I usually order from my local Thai place). So while I was grocery shopping, I felt inspired to grab a Kashi’s Thin Crust Mushroom Trio & Spinach pizza from the freezer aisle.

The verdict: it was surprisingly good. Generous amount of mushrooms, decent amount of cheese, and a crispy, buttery crust. Of course, it didn’t hurt that after nine minutes in the oven, that puppy was cooked. And at 250 calories, nine grams of fat and four grams of fiber for a third of the pie (which worked out to be two generous pieces), it was a pretty darn lean dinner. (I did top the pizza with leftover rotisserie chicken for a bit more protein). As far as fast and healthy dinners go, this one is worth trying.
