It’s apple season!

Apples are my favorite fruit–they’re versatile, delicious and make the perfect on-the-go snack. It doesn’t hurt that an apple a day will keep the pounds away. A recent Penn State study showed that people who ate a whole apple before an all-you-can-eat pasta meal consumed nearly 20 percent fewer calories than those who had a different snack that contained the same amount of calories as an apple. (Researchers point to apples’ high fiber and water content, which make them especially filling).

Given that apples are in season, I’ve been stocking up on local varieties (Honeycrisp and McIntosh are two favorites) at the fruit and farmers’ markets. And although our family hasn’t made our annual trip to the apple orchard yet, my sister presented me a giant bag of apples that she’d picked two days ago and said “What can you do with these?”

I promised her apple muffins or scones and an apple pie (I’ll share those recipes later this week), but yesterday, we opted for a simple feast of apples and thinly sliced Gruyère and smoked Swiss cheese. It was divine, and with almost no prep work or clean-up, made the perfect rainy Sunday snack.

Easy as apple pie

I like to slice the apple into about 12 pieces and lightly coat with powdered sugar (just enough to stick) and saute for a couple minutes till they start to soften.

Then spread them evenly in the pan (non-stick) and pour your pancake batter evenly throughout. Best method is to use a pan that’s going to make 1 large pancake to share. Cook till the edges are crispy.
